So as the world is panicking and stocking up on food, luckily, this isn’t a new thing for me. After going through the new born phase twice, I’m quite used to bulk cooking – as we’ve purchased a chest freezer before my first son was born. I find bulk cooking and freezing the meals healthier and cheaper. In these times, it makes even more sense to be doing that (stretching the dollar further and not getting too much takeaway).
Over the weekend, I ordered 2 boxes of fresh organic fruits and veges, then spent all day chopping up and freezing in bags. I also made an inventory of what’s in the freezer as we add and cross things out (which helps me eat those that are right at the bottom of the freezer). As it’s Autumn, I might start growing my own when the weather’s warmer. So with a whole heap of carrots, and finding some spare pastry sheets in the freezer, I shredded the carrots, added mince meat, parsley, eggs, quinoa, made some healthy alternative sausage rolls. As my kids have been home with me while I work, I thought a great way to entertain my 3.5 year old very active toddler and to get some excercise during my lunch time was to do some dancing lessons together using Youtube! He usually goes dancing on a Tuesday at childcare, so I decided to keep up with the routine at home and we did some hip hop dancing as well as Zumba. We actually both worked up a sweat! 😅
